Chicken Taco Recipe

Today I am posting one of my favorite low-fat healthy recipes: Chicken Taco meat

You need
about 1 pound boneless, skinless chicken breast
1 package taco seasoning
1 cup chicken broth (I just dissolve a chicken bullion cube in a cup of water).

Stir the package of taco seasoning into the broth.

Put the chicken in the bottom of your slow cooker and pour the broth/seasoning mixture over it. Cook until done. I usually start it out on high for an hour or so and turn it down to low. If I start it around lunchtime, it's done in plenty of time for supper.

Shred the chicken with a fork. This is great in tacos, enchiladas, quesadillas, and burritos!

Jumbo Foods Ad March 28th-April 3rd

This week at Jumbo's:

10# Russet potatoes: $2.49

Hormel spiral sliced ham: $1.69 a pound

Pillsbury Grand biscuits 12-17.3 oz, 10/$10. Use with 40 cent off 3 coupons to get them for about 87 cents each. (And yay! I"m out of biscuits so I need to stock up again. LOL)

Best Choice butter quarters: $1.79 for a one pound package. Excellent price!

Country Crock margarine: 45 oz, $2.99. There was a $1 off coupon in the All You magazine which would make this $1.99 or there were 40 cent coupons in the paper which would bring it down to $2.59

Clorox regular bleach, $1.88 for a 96 oz jug. There is also a $2 off two manufacturer's coupon in the ad, which would bring the price down to 88 cents each! That same coupon can also be used for Glad trash bags, Clorox clean up (on sale 2/$5, bring price down to 2/$3) and Clorox disinfecting wipes (on sale 2/$6 bringing price down to 2/$3)

Crystal Light drink mix: 7-10 count 2/$4. Use with $1 off 2 coupon and make it 2/$3

Staples ad March 25th-31st

This week at Staples, there are some fairly good deals:

Staples paper 8.5x11, 5000 case, $48.99 with a $24 Easy Rebate, makes it $24.99 a case. You can get up to two rebates this way.

Speaking of Staples and Easy Rebates, I just discovered recently that you can have your Easy Rebates sent to PayPal instead of waiting on a check. The first time, I wasn't impressed because they ended up sending me a check anyway but the next time I used it, I got the PayPay refund in about 4 weeks rather than the almost 8 weeks I waited for the check.

There is a $5 off $25 cleaning and break room purchase in the ad (you can also go print it off online). Staples does accept manufacturer's coupons so you may be able to stretch that coupon even farther.

K-mart deals 3-24-12

Check out what I got at K-Mart tonight for $20.65. I hadn't been to K-Mart since they changed their double coupon policy. Now they will double coupons up to $1, but you have to purchase $25 worth of grocery or HBA products and there is a limit of 5 coupons.

General Mills cereal was on sale for $2 a box, I got 6 boxes and used a $1 off 3 box coupons, so 6 boxes of cereal for $8 (or $1.33 a box)

Sunshine Cheez-its, 2/$5, used a coupon for $1 off two boxes, so $1.50 each.

Pringles, $1.67 each, I had some coupons for $1 off two, so got those for 67 cents a can.

5 packages of Bar S smoked sausage for $5, plus got a bag of chips and a can of pork and beans for free with the purchase of that.

$320 from the Lord

A couple of weeks ago, I told you about one of the credit card companies agreeing to settle an account for $320 and accept $25 monthly payments on that amount. Now, I didn't get that in writing (was distracted by the kids) and was going to call them last week about it. On Tuesday before I went to my club meeting, I stopped to get the mail. In the mail was a card from a friend with a $320 check along with a note that I'll paraphrase here. She and her husband were going to be getting some money and in discussing what to do about the money, her husband said he felt that God wanted them to tithe 10% and give 10% away and he felt like God wanted them to give us $320. She told him that she didn't think I would accept it and they agreed to pray about it and decide where the money would go later. A few days later, her husband mentioned it again. A few days after that, I texted her and told her about the settlement offer of $320 and she said that she knew then that her husband was right. So they sent us a check for $320 to pay that bill off and asked us to accept it from the Lord.

That is incredible enough, but here is the rest of the story:

I called the credit card collector and asked for a statement in writing that they would agree to that settlement. Spoke to the same lady as the week before who was so nice and helpful. She stalled and said she couldn't do it until AFTER I paid and she could only accept the payment if I did a check by phone. I refused to do that and I insisted on having it in writing before I would mail the check. She finally turned me over to a supervisor who faxed me a paper agreeing to the settlement and agreed that I could mail it.

I believe that God knew that the company was going to try to go back on their word about the payment arrangement (since I didn't get it in writing) and was protecting us through our friend. So here is a big thank you both to God and to our friends!

Debt Update March 20th

I've got a lot of things to share this week, but I'll start today with an updated debt list. We were able to pay off one of the credit card debts (settled in full) so that is one item paid off. Woohoo!!! I'll tell more about that later. And we've made a house payment (ON TIME so no late fee!!!):

$150 towards one credit card
$345 towards one credit card (settled in full-so PAID!!!!!!)

We also have $312 in our baby emergency fund, but that will probably drop today because we are having the Honda worked on.

Pineapple Angel Food Cake

Because of my couponing, I have an overabundance of canned pineapple right now, which reminded me to share one of my favorite dessert recipes with you:

Take one can of crushed pineapple (in juice, not syrup) and one box of Angel Food Cake mix (the kind you just mix with water). Stir the pineapple and cake mix together (nothing else, just two two items!), pour them in a 9x13 pan and bake at 350 for about 20-30 minutes. This is the yummiest stuff ever! Since Angel Food Cake isn't very high calorie, it's even a fairly healthy dessert. I've been making it for years since I first got it from a friend who was doing Weight Watchers.

Reminder: United Double Coupon event today until Sunday (March 1-4)

Just wanted to remind everyone that United is doubling coupons up to $1 today through Sunday, March 4th.

Save-a-Lot deals 2-29-12

I finally got a chance to go to Save-a-Lot and use the coupons that I told you about here: It Pays to be Persistent.

I got some really great deals. Sorry, I forgot to take pictures when I got home. I was just ready to put stuff up, eat supper, and collapse. LOL.

With the first $5 certificate, I got Libby's pineapples, on sale for 99 cents a can. Got 12 cans for $11.88. Used six $1 off 2 coupons to bring it down to $5.88. Then used the $5 certificate. That made it $1.87 with tax. So I got 12 cans of pineapples for $1.87!

The other $5 certificate, I got bread, ranch dressing mix, and some mints, it was $1.10 total.

Then for the other 3 transactions, I spent $25.69, $20.13, and $23.14. Some of the great deals in there were Sunshine Cheez-It crackers, on sale for $1. Use a $1 off two coupon to bring them down to 50 cents a box (plus what I saved using the $5 off $25 coupon). Tuna Helper, $1 a box, plus used a 75 cents off 3 coupon to get them for 75 cents a box. And they had a coupon for 25 cents off a can of tuna on them so I got 3 cans of tuna for .44 cents each after the coupon. Got some General Mills Cereal for $1.67 a box after using $1 off 3 coupon.

Most of the rest of the stuff I got was just stuff I needed, but it was nice to save a little extra on it using the $5 off $25 coupons.
